The key ingredients for this dish are obvious – beef and peppers. However, what kind of beef should you use? Do any types of pepper work for the dish? Here I’ve got the answers:
What kind of Steak Is Ideal: For this beef and pepper stir fry, the tenderness of the beef is key. High-quality steaks such as chuck steak, skirt steak work the best for this dish. Cheaper cuts are acceptable but they wouldn’t be as tender.
What Peppers to Use: Bell Peppers provide sweetness, fruity flavor to the dish. Jalapeno is meant to give a kick to the dish. It could be replaced by Chinese long green pepper. If you are not a fan of spicy food, you could use green bell pepper instead.

How to Make Beef and Bell Pepper Stir Fry
Step 1: Slice steak into bite-size and marinate
Cut the steak into slices against the grain and put it in a bowl. Add the marinade ingredients – salt and cooking wine – to the bowl, mix well together. Then put the cooking oil in and rub the beef slices. Keep the beef marinating for about 15 to 30 minutes.
Step 2: Prep the vegetables
While the beef is being marinated, go ahead and prep the vegetables. Firstly, slice the ginger and crush the garlic. Then cut the scallion into inch sections and cut the peppers into strips. When cutting the bell peppers, be sure to try to clean out as many seeds as possible. As for the jalapeño or long green pepper, I don’t mind having the seeds because that’s what makes it spicy and I like it. But you could clean out the seeds if you that bothers you.
Step 3: Sear The Beef
Heat up the frying pan over high heat, add cooking oil to the pan and saute the ginger and garlic. When the ginger and garlic aroma comes out, add in the beef slices and sear them until browned. In this step, the beef doesn’t need to be fully cooked. Take them out and set aside when the beef is browned on the surface and medium cooked.
Step 4: Stir Fry the Peppers
In the same frying pan, over high heat, put in a little cooking oil. Add the bell peppers and jalapeño to the pan and stir fry them for about 2 minutes.
Step 5: Combine Everything
After the peppers are being cooked a little, throw in the beef, scallions, and stir fry everything together. Pour in the soy sauce and cooking wine and make sure all the ingredients are coated with the sauce.

Another tip for stir-frying is to move fast – quickly pan sear the beef, once it’s browned put it aside and start stir-frying the vegetables. Overcooking the beef will make it chewy and dry.
- Keep it saucy
While the dish shouldn’t be watery, but it is the best when a small amount of soy sauce is still lingering. So at the last step, be sure to turn off the heat when the sauce is reduced but not all dried out.

- 1 lb Chuck steak sliced
- 2 tbsp Rice cooking wine
- 1 tsp Salt
- 2 tbsp Soy sauce
- 1/2 tsp Cooking oil
Other Ingredients for The Dish
- 2 tbsp Cooking oil
- 1 tbsp Cooking rice wine
- 3 tbsp Soy sauce
- 1 Red bell pepper
- 1 Yellow bell pepper
- 2 Jalapño
- 4 stalks Scallion
- 4 cloves Garlic
- 2 slices Ginger
Instructions
- Cut the steak into slices against the grain and put in a bowl. Add the marinade ingredients to the bowl and let it sit for 15-30 minutes
- While the beef is being marinated, crush garlic, slice the ginger, cut peppers into strips, chop scallions to inch sections
- In a frying pan over high heat, add cooking oil to the pan and saute the ginger and garlic. Add in the beef slices and sear them until browned, set aside the beef when it's half cooked
- In the same frying pan, over high heat, stir fry the all the peppers for 2 minutes
- Throw in the beef, scallions and stir fry everything together
- Pour in the soy sauce and cooking wine and make sure all the ingredients are coated with the sauce
