Make Your Perfect Brunch – Stir-Fried Beef Noodles and Pineapple Mimosa

I have missed chow fun for so long since I moved to Boston… I was thinking what to eat in the morning for Sunday brunch. Instead of just regular pancakes, French toasts, and coffee, I was like why not have a Cantonese chow fun this time? So we made this amazing beef chow fun plus delicious pineapple mimosa and French toasts! (Very random right? I mean a fusion of taste).

Let’s see what we need before we cook:

Ingredients:

Rice noodles

Thin beef slices

Scallion (chopped)

Chinese Chives (chopped)

Onion (chopped in sciences)

Bean sprouts (optional, I didn’t use)

Vegetable oil

Sesame oil

Salt

Soy sauce and dark soy sauce

Cooking wine (I couldn’t buy the right Asian cooking wine but I used rum and Vodka, and it turned out to be very yummy)

Flour 1 teaspoon

One egg white

Pre-cooking…

  • Put the rice noodles in warm water and sit for 6-8 hours. I put them in water the night before and drain the water when I get up.
  • Marinate the beef: put the beef in a bowl and mix with 1 teaspoon of salt, 1 tablespoon of soy sauce, and 2 tablespoons of rum/vodka, 1 egg white, 1 tablespoon of flour and 1 tablespoon of sesame oil

Step 1- cook the noodles

Boil the rice noodles just for 2 mins until it’s dente (don’t cook it too soft), and cool it down with cold water. Drain the water and put aside for later use.

Step 2 – Cook the beef

  • Put in about two tablespoons of vegetable
  • Stir fry the onion and beef until about medium and put them aside for later use

Step 3- stir fry noodles with everything

  • Put in 1 tablespoon of vegetable oil
  • Stir fry the bean sprouts (skip it if you don’t have bean sprouts)
  • Put in the noodles and stir fry with onion and beef
  • Mix them all with the scallion and Chinese chives
  • Put in two tablespoons of soy sauce and 1 tablespoon of dark soy sauce, fry with all the stuff
  • Season with salt to adjust the taste
